It's been awhile...<br />

I want to make it up to you.<br />

So how about some cake?<br />
<br />
This cake began with good intentions. There was a zucchini. There was a loaf pan. There were dreams of toasting slices and topping them with peanut butter for breakfast.<br />
<br />
But those things didn't happen because I remembered that I had a bunch of tiny round baking pans for making multi-layer mini cakes, and those pans had been nesting together in their box in mint condition since I received them as a bridal shower gift from a lovely coworker about a year ago.<br />
<br />
And also because chocolate.<br />
<br />
So here you go, mon petit Spatulettes! I hope you have your cake and eat it too!<br />
<br />
<i>p.s. You can still eat this for breakfast. It is Breakfast Tested, Breakfast Approved. Nobody can tell you not to. Being a grownup is awesome.</i><br />

Almost Healthy Chocolate Cake</h4>
<i>Makes 7 generous slices of a mini 4 tier cake</i><br />

Here's What You'll Need:</h3>

<u>For the Cake:</u></div>
<div>
1 medium zucchini (250 grams)</div>
<div>
1/2 cup applesauce</div>
<div>
1/3 cup oil (I used sunflower)</div>
<div>
1 1/2 tsp apple cider vinegar</div>
<div>
1 1/2 tsp vanilla extract</div>
<div>
1 1/2 cups all purpose flour</div>
<div>
1/2 tsp baking soda</div>
<div>
3/4 tsp salt</div>
<div>
1/2 tsp cinnamon</div>
<div>
1/3 cup and 2 tbsp sugar (I used raw)</div>
<div>
2 tbsp cocoa powder (I used raw cacao powder)</div>
<div>
A whole bunch of chocolate chips (I just found the best dairy-free ones at Sprouts!)</div>
<div>
<br /></div>
<div>
<u>For the Frosting:</u></div>
<div>
1/2 cup tofutti cream cheese (thought I suppose regular would work)</div>
<div>
1/3 cup stick margarine (I used Earth Balance)</div>
<div>
3 cups and a bit more powdered sugar</div>
<div>
A sprinkle of dried coconut</div>
<div>

Here's What You Do:</h3>
<div>
Preheat the oven to 325.</div>
<div>
<br /></div>
<div>
Finely chop or make quick work of your zucchini by shredding it in a food processor. A cheese grater would work in a pinch.</div>
<div>
<br /></div>
<div>
Combine shredded zucchini, applesauce, oil, vinegar, and vanilla in a mixing bowl. Mix it up and let it sit for a few minutes while assembling the dry ingredients.</div>
<div>
<br /></div>
<div>
Mix all your dry ingredients together, except for the chocolate chips.</div>
<div>
<br /></div>
<div>
Combine your wet and dry mixtures. I used my beloved yellow Kitchen Aid on low speed. Add in chocolate chips.</div>
<div>
<br /></div>
<div>
Grease your pan(s) and fill them with cake batter. You can use <a href="http://www.surlatable.com/product/PRO-1463454/Wilton+5+Layer+Cake+Pan+Set" target="_blank">mini pans like mine </a> in which case you'll use 4 of them. Any pan will do though. This might change your baking time, so be careful.</div>

Bake for 35-45 minutes until a toothpick inserted in the middle comes out clean. Remove cakes from mini pans and cool on a wire rack for a few hours.</div>
<div>
<br /></div>
<div>
Once the cake has cooled and you're ready to frost, mix all the frosting ingredients together in a bowl (electric or hand mixing is fine). The more powdered sugar you use, the thicker the frosting will be.</div>
<div>
<br /></div>
<div>
You can top your cake with coconut, or even more chocolate chips, or walnuts. Go wild!</div>
<div>
<br /></div>
<div>
My cake chilled in the fridge for a few hours before we dug in. </div>
<div>
It kept well in the fridge for the 3 days that it existed before we at it all. </div>
<div>

<div>
It was a mini cake yet enjoyed by many; including my Aunt Kathleen who came all the way from the east coast and THEN braved California public transportation along with my Nana Jane to come check out our new house and have some cake.</div>

I would be lying if I said I never pre-judged a recipe by it's picture. But we all know, sometimes that beautiful roast turkey is bone dry, and sometimes the prettiest salad is hiding something you can't stand <i><span style="font-size: x-small;">(i'm talking to you, frisee)</span></i>. </div>

But sometimes, just sometimes, the opposite happens.</div>

Sometimes, the carefully planned dish you're spent days dreaming of and gathering ingredients, and choosing a nice bottle of wine to go with, and cleaning your house so it looks nice when your future in-laws come over for dinner, and imagining how pretty and wonderful it will be to post pictures of it on The Yellow Spatula; just looks like a pile of mush!</div>

1 peeled eggplant, sliced in long, thin pieces (I used a mandoline slicer)</div>
<div style="text-align: justify;">
1 can drained kidney beans</div>
<div style="text-align: justify;">
2 chopped zucchini</div>
<div style="text-align: justify;">
2 chopped carrots</div>
<div style="text-align: justify;">
1 cup chopped mushrooms</div>
<div style="text-align: justify;">
2 cups spinach</div>
<div style="text-align: justify;">
1/2 chopped onion</div>
<div style="text-align: justify;">
1/4 cup chopped parsley</div>
<div style="text-align: justify;">
2 minced garlic cloves</div>
<div style="text-align: justify;">
To taste: crushed basil, fennel seeds, Italian seasoning, pinch of salt/pepper</div>

Tomato sauce (leftover works fine)</div>
<div style="text-align: justify;">
Daiya cheese (I used shredded pepperjack)</div>
<div style="text-align: justify;">
Cashew cheese (Basic cashew cheese recipe from <u><a href="http://ohsheglows.com/2012/08/21/easy-roasted-tomato-pizza-with-basil-cashew-cheeze-2012-vegnews-awards/" target="_blank">here</a></u>; I left out the lemon because my favorite wine consultant Bob told me the acidity in the main dish would catastrophically destroy the delicate flavors of the wine he helped me choose. If you too would like a wine consultant, I can't recommend <u><a href="http://sanclemente.patch.com/listings/bobs-fine-wines" target="_blank">this guy</a></u> enough. Please go visit his store and buy lots of wine from him.)</div>

<u>Here's what to do:</u></div>
<div style="text-align: justify;">
Preheat the oven to 400 degrees.</div>
<div style="text-align: justify;">
Set a cookie sheet underneath the oven shelf where you'll bake the lasagna (prevent spillage!).</div>
<div style="text-align: justify;">
Grease your baking dish (I used TJ's coconut oil spray).</div>
<div style="text-align: justify;">
Sautee all the veggies, carrots first, until soft but not mushy.</div>
<div style="text-align: justify;">
Drain and rinse the beans, add them to the sautee.</div>
<div style="text-align: justify;">
Let the layering begin!</div>
<div style="text-align: justify;">
Put a layer of tomato sauce in the bottom of the baking dish.</div>
<div style="text-align: justify;">
Follow it with a layer of eggplant on top. It's ok if the eggplant slices overlap a bit to fill up the dish.</div>
<div style="text-align: justify;">
Top it off with a layer of cashew cheese.</div>
<div style="text-align: justify;">
Repeat: sauce, eggplant, cashew cheese until you've used up all the eggplant.</div>
<div style="text-align: justify;">
Sprinkle the top of the dish with the daiya cheese.</div>
<div style="text-align: justify;">
Cover with tinfoil.</div>
<div style="text-align: justify;">
Bake for about 40 minutes until everything is bubbly .</div>
<div style="text-align: justify;">
Remove tinfoil and broil for about 3 minutes until the cheese is melty and browning and incredibly wonderful. Don't leave the oven while you work on this. In fact, don't let your hand leave the oven door handle while you watch the browning action like a hawk, or you'll burn it and things will get sad.</div>
<div style="text-align: justify;">
Remove from the oven and please let it sit for about 5 minutes so your guests don't burn their tongues.</div>
<div style="text-align: justify;">
Serve, with some perfectly paired wine like <u><a href="http://rebelcoastwinery.com/products/2012-reckless-love" target="_blank">this one</a></u> (but Bob has a better price).</div>

I'm not gonna lie... this was the most TIME AND LABOR INTENSIVE salad in the world...<br />
And it was worth every precious second of prep!<br />

I was inspired by <a href="http://ohsheglows.com/2014/03/24/exciting-news-plus-the-nourish-glow-miracle-bowl/">OhSheGlows </a>and a rare, leisurely Tuesday afternoon. Because it literally took all Tuesday Afternoon. I could have taken a few shortcuts here and there like not making home made salad dressing and hummus from scratch. Or using a can of tuna instead of making vegan almond "tuna" salad. But I didn't. And here's what I got:<br />

<i>Chop up the garlic in a food processor (or little cuisinart chopper). Add the garbanzo beans, tahini, sundried tomatoes, lemon juice, olive oil, and salt. Whiz until smooth. Add in the water a little at a time to thin your hummus to the desired consistency. You can also add more lemon juice or olive oil if you're so inclined. </i><br />
<br />
<i>Don't eat it all yet so there's some left for the salad.</i><br />
<br />
<u>And the "Tuna Salad":</u><u> </u><br />
<ul style="text-align: left;">
<li>1 cup raw almonds, soaked for about 2 hours, rinsed, and drained </li>
<li>2 stalks of finely chopped celery</li>
<li>1 minced garlic clove</li>
<li>3 tablespoons of mayo (I used leftover cashew sourcream, but you could also use extra cashew puree from your salad dressing) </li>
<li>2 teaspoons of dijon mustard (I used grey poupon because it's fun to say)</li>
<li>A pinch of salt</li>
<li>A pinch of pepper</li>
</ul>
<i>Put the soaked and rinsed almonds into the food processor and pulse until all of the almonds are chopped up and starting to look like tuna. Add the rest of the ingredients to a bowl with the almonds as you would make regular tuna salad! This is seriously SO GOOD.</i><br />
<br />
<u>Assemble the Minions! I mean... Assemble the Salad!</u><br />
Put all the ingredients in a bowl. Sit down and eat because you're going to be starving at this point. Unless you snacked on the hummus and tuna already while you waited for your dinner date to get home. I think I enjoyed taking pictures of this salad as much as I enjoyed eating it, so i'll leave you with some eye candy.<br />

Detroit Fried Matzah</h4>

<i>Note: </i></div>

<i>The main difference between Detroit Fried Matzah and Matzah Brei is two words in the title of the recipe. Just change the name for maximum Detroit-ness.</i></div>

<u>Here's what you'll need:</u></div>
<ul style="text-align: justify;">
<li>1 Square of Matzah (I used gluten free because sometimes I don't eat normal things anymore)</li>
<li>A splash of milk (I used coconut. See above.)</li>
<li>2 eggs, scrambled</li>
<li>A pinch of cinnamon</li>
<li>A pinch of nutmeg</li>
<li>A pinch of salt</li>
<li>Maple Syrup (I used melted coconut oil with some cinnamon mixed in but it's probably not very authentic) </li>
<li>Berries (and/or powdered sugar) to garnish </li>
</ul>
<div style="text-align: justify;">
<u>Here's what to do:</u></div>
<ul style="text-align: justify;">
<li>Crumble up the matzah into small-ish pieces, bigger than an oyster cracker, but smaller than a saltine cracker.</li>
<li>Soak the matzah pieces in the scrambled egg mixed with milk and spices until it's nice and mushy.</li>
<li>Cook like you would a round omelet; pour the mixture into a heated pan (make sure you oil the pan first if it's non-non-stick). Swish it around and pull the edges in with a (yellow) spatula to allow more egg mixture to fill in any cracks. Let it sit for a a bit until it's sturdy enough and toasty enough to flip. Cook through.</li>
<li>Serve smothered in berries or syrup or whatever else you like. Go wild!</li>

<li><span style="font-size: 15px; font-weight: normal;"><span style="font-family: Arial, Helvetica, sans-serif;">Use the cutting board like a pizza paddle to CAREFULLY place the parchment paper with the pizza dough onto the pizza stone in the oven.</span></span></li>
<li><span style="font-size: 15px; font-weight: normal;"><span style="font-family: Arial, Helvetica, sans-serif;">Bake for 30-40 minutes until the edges are crispy but not totally burnt because it's going back in the oven with the toppings for a little while longer.</span></span></li>
<li><span style="font-size: 15px; font-weight: normal;"><span style="font-family: Arial, Helvetica, sans-serif;">While the pizza crust is baking, sautee your onions and mushrooms (or prepare your pizza topping of choice)</span></span></li>

So in my quest to be as healthy and happy at the wedding as humanly possible, I decided I needed to make some changes. Between stress at work, having a constant stomache ache, and having an impossibly difficult time getting myself out of bed in the morning, I knew that something had to change, but I didn't know how to do it! So when my friend and MOH Jessica became an Arbonne consultant and I went to her first "party" and heard about a "2-week Detox" including lots of whole foods, tons of water, and required all meals to be completely free of anything I could possibly be allergic to, I knew I wanted to try it! I was initially worried about it because it required giving up caffeine, and given my anti-morning-person-can't-get-out-of-bed track record, I didn't know if it would be possible. But I tried skipping coffee one day (on a Sunday before I started the "detox" when I could be relatively lazy and it was ok), and then I tried it the next day (and felt a little less lethargic) and by the third day I literally felt like I had more energy without the coffee than with the coffee! I got myself out of bed on time without snoozing 2 (or 3 or 4 or 5) times, which was a bad habit i'd been doing for longer than i'd like to admit!</div>

So i've been doing this detox for 2 weeks now (and I literally lost 5 pounds in the process which I wasn't expecting!) and have decided to keep going for another 2 weeks because I feel SOOOOO much better! I don't know what it is that was giving me the constant tummy-ache yet, but afterward i'll add things back in, one at a time, and figure it out.</div>

-8 basil leaves</div>

-sprinkle of ground pepper</div>

-3 garlic cloves (i've been using the frozen cubes of garlic from Trader Joe's; LOVE THEM)</div>

-2 tbsp olive oil</div>

-Juice of 1/2 a lemon</div>

<u>Directions:</u></div>

-Julienne the zucchini and put your "spaghetti" in a colander. Use some papertowels to squeeze most of the liquid out</div>

-Chop up the basil, avocado, garlic (or put in garlic cubes); Add salt, pepper, olive oil, and lemon juice to a food processor (I used the chopper attachment on my amazing immersion blender tool)</div>

-Blend baby blend!</div>
<div style="text-align: left;">
-Heat up a pan with your 1 tbsp of olive oil, then briefly sautee the spaghetti just until it's a little wilty</div>

-Add in the the cream sauce and mix it in.</div>

Serve with a dollop more of sauce on top. I sprinkled with a little smoked paprika for fun.</div>

And I forgot to mention it to anybody! Can you believe it? To make it up to you, my favorite Spatulettes, how about some breakfast pie? My mom and I made this together on Christmas morning, inspired by <a href="http://smittenkitchen.com/blog/2013/12/breakfast-slab-pie/">THIS</a> with some lactose-intolerant friendly changes, like nixing the crust and using soy cheese.<br />

Here's what you'll need:</h4>
4 yukon potatoes<br />
A Trader Joe's (or similar) bag of baby spinach<br />
About a cup of grated soy cheddar cheese (the brand that Ralphs's sells)<br />
4 scallions cut into tiny slices<br />
11 eggs<br />
Salt and pepper to taste<br />
Oil for the skillet<br />
(We didn't use it, but some crispy chopped up bacon in here would be lovely if you're bacon inclined)<br />

Here's what to do:</h4>

Boil the potatoes until they're soft but not mashable. Slice them into 1/4 inch rounds.</div>
<div>
Steam the spinach and drain.</div>
<div>
Oil your skillet (unless yours is perpetually seasoned which, apparently, is a thing. Do you do this?)</div>
<div>
Layer the potatoes on the bottom of the skillet until they fit.</div>
<div>
Layer the spinach on top of the potatoes.</div>
<div>
Add some cheese and scallions.</div>
<div>
Add more potatoes if there are still some leftover.</div>
<div>
Add more cheese and scallions.</div>
<div>
Scramble the eggs in a big bowl, add a little salt and pepper, and pour over the veggies in the skillet.</div>

Add the rest of the cheese and scallions.</div>
<div>
Bake at 350 degrees for approximately 45 minutes. (Ours took an hour)</div>

As long as I can remember, whenever asked my favorite food I have replied, "Spaghetti and pickles," (not <i>usually</i> together...) One of my greatest culinary woes is that the amount of spaghetti I would gladly consume in a dream world is directly proportional to the amount of jeans sizes I would have to increase in the real world. </div>

It was my go-to veggie pasta friend for years until I met someone new. And my new friend is pretty amazing. This baby turns ANYTHING into pasta! So far, my favorites are papaya (more on that coming soon after I perfect a recipe...) and zucchini. And it's so fun to use! <li>Once it's shrunk down a bit and your zucchini is <i>al dente</i>, remove from the stove.</li>
<li>Add in the tuna, canned tomatoes, olives, and some red pepper to taste.</li>
<li>Drizzle on some more olive oil for garnish, and top with some actually julienned basil. I'm still working on julienne-ing basil. The peeler won't do it! </li>
<li>Enjoy with your favorite glass of something delicious!</li>

Ok, I don't know if this can actually be considered a recipe because I literally just threw some leftovers in a bowl to make it. You've still got your zucchini and tuna, but added in are seaweed, sesame oil, rice vinegar, some leftover tricolor quinoa, and a Japanese seasoning called <a href="https://en.wikipedia.org/wiki/Furikake">Furikake</a>.</div>

If you're a seaweed fan, stay with me. If you're not, well then you have some fancy Italian "pasta" to tide you over. Basically, what you do is toss together all the ingredients and sprinkle with some sesame oil swapped for the olive oil from before. Furikake is <i>really good</i> if you haven't tried it and you're ok with your food tasting like the ocean. It's crunchy, salty, and sweet, which complemented the zucchini and fish perfectly. You can find it at any Asian grocery store. It's also really good on eggs, rice, or even in a tuna sandwich! </div>

It's just as delicious as it is colorful! And here's how to make it:</div>

Ingredients:</h4>

2 cups of farro (I used semi-pearled)</div>
<div>
Steamed, cubed butternut squash (mine was the steamer bag from Trader's)</div>

A bunch of kale</div>
<div>
Small red onion</div>
<div>
Pepitas, to taste</div>
<div>
Red wine vinegar</div>
<div>
Optional protein source to add in later (I used basil chicken sausage)</div>

Directions:</h4>

<li>Cook the farro according to the package directions</li>
<li>Dice the red onion. Let it pickle in 1/4 to 1/2 a cup of red wine vinegar (just enough to cover the onion) while you make the rest of the salad</li>
<li>Steam your squash and kale using your preferred method</li>
<li>When all of these hot ingredients have cooled, pour it all into a bowl</li>
<li>Add pepitas and red onion/vinegar mixture. Toss.</li>
<li>Serve along with your "protein" to make a meal out of it!</li>

The farro itself is pretty filling. I added the kale and the sausage this time and they were both excellent complements to the salad. There are so many amazing flavors combined in here that every bite is just a little bit different and all the colors make it a beautiful dish to eat! </div>

I'm back from an unintentional blogging hiatus taken due to things like finishing my doctoral research project (YES!!!!), finding a new apartment (can't wait to show you!), eating Native Foods several times per week, and fixing my kitchen sink which exploded in a terrible, terrible way (yep, time for a new apartment!)<br />

I intended to make <b><i><a href="http://smittenkitchen.com/blog/2009/12/mushroom-marsala-pasta-with-artichokes/">this</a> </i></b>Mushroom and Artichoke Marsala Pasta but what I ended up with was almost entirely unlike it, yet nevertheless, sensationally scrumptious.<br />

You see, when I arrived at the store to buy frozen artichokes and marsala wine, the store was out. But it DID have a conveniently packaged "green bean sautee" full of green beans, red onion, and mushrooms and I knew there was a half-full bottle of cabernet sauvignon on my kitchen counter.<br />

Ingredients:</h3>

Green beans, chopped</div>

A few mushrooms, chopped</div>

A small onion, chopped</div>
<div>
A bunch of parsley, chopped</div>
<div>
Olive Oil</div>

Pasta (I used Rigatoni)</div>

A splash of "cream" (or soy milk)</div>

Red, red wiiiiiiiine (stay close to meeeee) (ok maybe I had a glass before writing this post)</div>

Instructions:</h3>

Start cooking the pasta until al dente</div>

Heat olive oil in a large pan</div>
<div>
Add onion and sautee until almost translucent</div>

Then add the green beans and mushrooms</div>

Once everything looks nice and sautee-ey, add 1 cup of wine</div>
<div>
Turn down the heat and simmer until almost gone</div>
<div>
Drain the pasta, add to the veggies</div>
<div>
Add the chopped parsley</div>
<div>
Add a splash of soy milk and stir it all together</div>

One of my dinner rules I try to stick to is to always include at least 1 green thing and some protein. This dish was missing the protein so I crumbled up and sauteed a little tempeh in the pasta pot to mix in with the pasta. If tempeh doesn't sound tempting, you could do the same thing with chicken (mmm cooked in the wine sauce) or serve the dish with some grilled salmon. I think i'll have to make it several more times and try it with all of the above!</div>

I have a love of all things pickled, so I think the sauerkraut is the key. I discovered this recipe on the cover of Fine Cooking Magazine while in line at the grocery store and it was just so beautiful, I had to get out of line and go back into the store to get the ingredients to make it!<br />

2 cups of the prettiest tiny tomatoes you can find</div>

Spaghetti Squash:</h3>

<i>I'm not kidding... it's really REALLY easy!</i></div>

<li>Pick out a nice spaghetti squash (bright yellow and heavier-than-it-looks means it's a good one)</li>
<li>Bring it home.</li>
<li>Stab your nice spaghetti squash with a fork several times on all sides (it won't mind)</li>
<li>Microwave it for 5 minutes.</li>
<li>CAREFULLY turn it over and microwave another 5 minutes.</li>
<li>Turn it again and another 3-5 minutes in the micro.</li>
<li>You'll know it is done when it gives a little when you poke it.</li>
<li>Wait for it to cool a bit and carefully cut it in half</li>
<li>Scoop out the seeds and mushy stuff in the middle</li>
<li>(Here's the fun part) Rake a fork through the squash and you'll see magical spaghetti squash strands appear! </li>
<li>Set your spaghetti aside for later</li>
</ul>

Pesto and Veggies:</h3>

<li>Preheat your oven to 425</li>
<li>Cut the bottom half-inch or so off of the asparagus <i>(in my picture below, I cut it into chunks too early and later had to separate the stems and tips by hand!)</i></li>
<li>Place the asparagus and tomatoes on a baking sheet with some olive oil and sprinkle some salt</li>
<li>Bake for approximately 18 minutes until the tomatoes are nice and wrinkly and the asparagus is bright green and a little toasty</li>
<li>Toast your almonds for about 10 minutes on another baking sheet</li>
<li>Set aside the tomatoes</li>
<li>Set aside the asparagus tips. Chop up the asparagus stems</li>
<li>Set aside 2 tablespoons of toasted almonds</li>
<li>Grind up the rest of the almonds in the magic bullet</li>
<li>Add the following into your magic bullet along with your ground almonds:</li>
<ul>
<li>Asparagus stems</li>
<li>Basil</li>
<li>Olive oil to taste and consistency</li>
<li>A little salt</li>
<li><i>(if you're a cheese person, you can add 2 tablespoons of grated parm here)</i></li>
</ul>
<li>Blend it up! I had to stop, shake it, and add olive oil a few times.</li>
</ul>

Finishing Touches:</h3>

<li>Mix the pesto with the spaghetti squash.</li>
<li>Add some water if the pesto is more paste-y than saucy. (Rachael Ray would tell you to add starchy pasta water but since we don't have any, regular water works just fine!)</li>
<li>Garnish with the asparagus tips, tomatoes, and the rest of the toasted almonds</li>
</ul>

So when my friend Emily decided to have a Thanksgiving Potluck for her birthday last weekend, I was more than a little excited!<br />

I was planning on making <a href="http://smittenkitchen.com/blog/2007/10/pumpkin-bread-pudding/">THIS</a> and actually serving it IN a pumpkin! But it's almost impossible to find a pumpkin in April so I was a little relieved when I was assigned cranberry sauce.<br />

Except then I realized... it's almost impossible to find cranberries in April too!<br />

Matt said "So we'll just buy a can, right?"<br />

I said "Nay! Boo!"<br />

He said "We can like, take it out of the can and serve it on a plate to make it nice"<br />

I said "Are you crazy!? We're going on a scavenger hunt to find cranberries. Real, actual cranberries."<br />

In hindsight, i'm not actually sure which idea was crazier...<br />

It turned out to be more difficult to find a can of cranberry sauce than a bag of frozen cranberries so the home-made way won in the end! My apologies to any of <i>those </i>families out there who swear by the gelatinous tower of cran. It's really so easy to make it yourself! And what could be a better excuse to mix practically equal parts sugar and fruit together than Thanksgiving in April!?<br />

Homemade Cranberry Sauce</h4>

12 oz fresh or frozen cranberries</div>
<div>
1 cup water</div>
<div>
1 cup sugar</div>

1 orange</div>

Boil the water and simmer with the sugar until it is dissolved. Add the cranberries. Add some orange zest to taste. You can even squeeze some of the orange juice in. Wait a few minutes and the berries start popping! After about 10 minutes, when all of the berries have popped and the liquid is half reduced and starts to thicken, remove from the heat and cool in a bowl. As the sauce cools, it will thicken by itself. Keep it cool in the fridge until you're ready for your Thanksgiving feast!<br />

Everything else that everyone brought, incidentally, was AMAZINGDELICIOUS as you can tell from the table!</div>

When i'm on my way home from work, absolutely starving, the only thing that keeps me from driving right past my apartment to Rubio's or <i>omg Native Foods</i> (at least most of the time) is knowing that I have so many delicious things waiting in my fridge to combine into an amazing new creation! The best thing for one of these occasions is usually something short and sweet, so i'll keep this post just that!</div>

Short and Sweet Squash Soup</h4>

Ingredients:</h3>

Butternut Squash <i>(Mine came in cubes from a bag from Trader Joe's)</i></div>

1 to 1.5 cups soy milk</div>
<div>
Small bunch of parsley leaves</div>
<div>
3 or 4 fresh sage leaves</div>
<div>
1 tablespoon chopped shallot</div>
<div>
Salt and pepper to taste</div>
<div>
Smoked paprika for sprinkling <i>(If you haven't tried it before, you simply must!)</i></div>

Soup:</h3>
</div>

<li>Steam the squash according the TJ's bag. Leftover baked squash also works well. No time to bake squash when you're already hungry!</li>
<li>Add squash cubes, parsley, sage, shallot, salt, and pepper to magic bullet cup.</li>
<li>Blend for about 25 seconds until smooth.</li>
<li>Pour into a bowl and garnish with extra sage and smoked paprika.</li>
</ul>
For some crunch and added gourmet-ocity, make some garlic toasts for dipping:</div>

A few months ago I made Risotto for the first time. Specifically, <a href="http://smittenkitchen.com/blog/2007/01/someday-my-spring-will-come/">THIS</a> risotto.<br />

And I was in loooooove.<br />
<br />
Lately, i've been craving more. With a gigantic, final grad school paper standing between me and the rest of my life as a "real grown-up" I thought the time consuming task of risotto preparation would just be irresponsible. But earlier this week I had a brief reprieve from the crazy project and before I had a chance to collapse in a paper-editing induced stupor on my living room floor, I declared:<br />

"Tonight, I am making risotto!"</h3>

The leftover asparagus spears were egging me on from their spot in the refrigerator anyway.<br />
<br />
The only problem was, this risotto calls for things like mushrooms, artichoke, white wine, and um... Arborio rice. When I took stock of my food storage situation, I realized I was missing most of the ingredients that make risotto risotto! <br />
<br />
But powering through an entire paper looking for extra/missing commas and periods in the phrase "et al.," for several hours gave me the sense that I <i>really deserved</i> this risotto and I was going to make it work!<br />
<br />
So, I swapped the mushrooms and artichoke for some leftover shallot, the white wine for RED!<br />
<br />
The biggest challenge was that I only had a tiiiiiiiny bit of Arborio rice; clearly not enough for a big pot of risotto. So I decided to mix it with Quinoa! <br />

All in all, it turned out to be SO good! This recipe is creamy, buttery, nutty, light, and a little tangy! <i>(And of course, lactose free!)</i><br />
<br />
And besides the deliciousness, there are <i>secret benefits </i>of risotto. You have to know, risotto takes TIME. You have to watch it, and stir it, and love it, and take care of it so it doesn't burn and stick to the pot. And the undivided attention you have to give it creates sort of a meditation like state. It's all very Zen. And don't forget all the calories you burn from the stirring! <br />
<br />
That being said, making risotto is basically just like going to a yoga class.<br />
So mix, stir, eat, and then have a little savasana for dessert!<br />
<br />
<h4 style="text-align: center;">
Risotto So Crazy it Just Might Work</h4>
<h3 style="text-align: left;">
Ingredients:</h3>
<div>
About 2/3 cup of Arborio Rice </div>
<div>
About 2/3 cup of Quinoa</div>
<div>
4 cups vegetable or chicken stock <i>(I prefer home made but in this case, Better than Bullion)</i></div>
<div>
1/4 cup of red wine</div>
<div>
Half a shallot, chopped </div>
<div>
Half a cup of chopped onion</div>
<div>
1 garlic clove, chopped</div>
<div>
A few sage leves</div>
<div>
3 tablespoons "butter"</div>
<div>
Olive oil (as needed)</div>
<div>
A bunch of asparagus spears, cut into 2-inch pieces</div>
<div>
A splash of milk <i>(I used soy)</i></div>
<div>
Salt and Pepper to taste</div>

Get out two cooking pots: one larger for your risotto, one smaller for your stock. Get out a ladle or scoop. (I like to use a 1/2 cup measuring cup). Like so:</div>

<li>Bring the stock to a simmer then turn it down so the stock stays hot but not boiling the whole time you're cooking.</li>
<li>Melt 2 tablespoons of the "butter" with some olive oil in your bigger pot until hot</li>
<li>Add shallot and onion. Cook until almost translucent.</li>
<li>Add garlic, sage, and asparagus.</li>
<li>Cook for about 4 minutes. You don't want anything to burn.</li>
<li>Take out the veggies/herbs and put them in a separate bowl.</li>
<li>Add a little more olive oil to your big pot.</li>
<li>Pour in the rice/quinoa and mix together.</li>
<li>Cook until just toasted.</li>
<li>Add the wine. Stir it up.</li>
<li>When the wine is absorbed, add 1/2 a cup of the stock. </li>
<li>Stir, stir stir until absorbed. Add another 1/2 cup and stir it up...</li>
<li>Keep adding 1/2 a cup at a time and stirring constantly. If you forget, your risotto will burn and you will cry :(</li>
<li>Once most of the stock is absorbed, check your quinoa to see if it's soft. If it isn't add the rest of the stock and cover the pot for a few minutes. Then stir and stir until all absorbed.</li>
<li>Add the veggies back in, add the milk, and a tablespoon of "butter" and stir some more</li>
</ul>

Sometimes, after a long week full of overscheduled patients, schoolwork, and lack of sleep, cooking something spectacular sounds particularly UNspectacular.<br />

And that's where Breakfast for Dinner comes in!<br />

Breakfast for dinner is one of my favorite dinners. I remember when I was growing up, my mom <i>(and gourmet-goddess-cooking-inspiration-extraordinaire)</i> would make breakfast for dinner once in awhile and it always felt like a special occasion!<br />

For a brief, dark period of time as a college sophomore without a meal plan, I pretty much ate <i>(burnt or undercooked)</i> scrambled eggs every night, except for a brief foray into a creation I like to call "sauteed salad with marinara previously opened yet not refrigerated" so breakfast for dinner wasn't quite so novel...<br />

But now, it's still my favorite easy, quick, comfort food dinner :)<br />

I made a few little changes...<br />
I didn't buy enough spinach so I used some of the mixed greens I bought for the fennel salad.<br />
I used sourdough bread (From the bread pitcher!) instead of sandwich bread because it was all I had.<br />
And then when it was ready, I ate it with a little leftover piece of fried sourdough. YUM!<br />

It was DELICIOUS!<br />

The smoked paprika was a perfect touch!<br />

This would make AMAZING appetizers! You could serve them on little toasts with a sprinkle of smoked paprika and the entire tray would be gone in 5 seconds!<br />

This was also a really quick recipe to make! You can make all of it in one pot plus the magic bullet so it's easy to clean up after too. I was starving when I left work and was about to forgo the recipe for a Rubio's burrito but after reading through, I realized the recipe was simpler than it looked. It probably took 20 minutes from garbanzo can opener to bon appetit.<br />

I was actually a little sad when I finished my plate... I think i'm off to get seconds!<br />

P.S. I discovered some great new cooking music today. I heard about <a href="http://www.freshlyground.com/">FreshlyGround</a> on NPR on my way home from work. They're kind of like No Doubt from the 90s but they're from Africa and sound like nothing else!</div>

The past few weeks have been busy but i've been cooking anyway! I've rekindled a passion for my favorite cooking apparatus... The Magic Bullet! I saw the infomercial the other day and realized I could do so many things i'd never tried. This thing is seriously magic. So far, i've made tons of smoothies, sorbet, omelets, pasta sauces, and used it to chop onions/garlic/sage to spice things up :)<br />

<b>Mustard Potato and Green Bean Salad</b></h4>

Blanche the green beans and boil the potatoes for about 12 minutes.</div>
<div style="text-align: center;">
Cool the veggies.</div>
<div style="text-align: center;">
Mix together dijon mustard, lemon juice, and chopped shallot.</div>
<div style="text-align: center;">
Cut the potatoes into chunks and cut the green beans in half.</div>
<div style="text-align: center;">
Mix the mustard sauce with the veggies.</div>

<b>Mixed Veggie Tofu Soup</b></h4>
This recipe actually came from an Acai juice cleanse recipe book Matt bought at Costco. We modified it with the tofu to add some protein since we weren't juice cleansing:<br />
<br />
Pick your veggies! <br />
We used shallot and a bag of mixed veggies from Trader Joe's (carrot, broccoli, cauliflower). <br />
Cook in vegetable stock until soft. Add in whatever spices you want (we used garlic, salt, and pepper).<br />
Place in blender and add cubes of silken tofu. (we used 3/4 of a regular box of tofu).<br />
<br />
HERE'S THE SECRET!<br />
If you blend hot things in a regular blender, it forms a terrible vortex of death that will explode and burn you if you don't do it properly! Take the circular insert out of the blender top before turning it on and hold a folded up kitchen towel over the hole. Hold it while you blend. Prevents splashes and lets the air flow through so you don't end up with vacuum-sealed-explosion-death soup.<br />
<br />
Put it all back in the pot and cook it a few more minutes. Pour into bowls and enjoy with your boyfriend and his parents who said they weren't hungry until they smelled the soup and then finished it all!</div>

After waking up twice in the middle of the night thinking "Oh no my pot roast must be burning!" I finally took it out of the crock pot around 7 am. My apartment smelled <i>amazing</i> and I portioned part of the roast for lunch, put part in the fridge, and froze another part for later. I brought it for lunch at work along with some leftover tofu kale salad, but didn't end up eating the salad because between the incredibly delicious roast and veggies, I was full! <br />

Trader Joe's cabernet roast. Browned the roast with olive oil and tossed it into the slow cooker with some potato, carrots, and mushrooms, wine, and vegetable stock. Started it around 7 PM, and it will be done tomorrow around 7 AM! I'll post the results here too :)</div>
